Our ingredients

Our greatest treasure is the use of genuine, zero-mile products.

All the vegetables we serve are products of our farm.

All our natural products are enriched with extra virgin olive oil of our factory production..

We use mother yeast and type 1 flour to make bread. The flour is made from wheat grown and ground in local mills.

We only serve beef, pork and horse meat, and fresh cheeses from Salento farms. Even the eggs come from hens raised on the ground, of course in Salento.

All the wines we offer are produced by farms in Salento: Cantina Apollonio in Monteroni, Cantina Vecchia Torre in Leverano, Cantina Fiorentino in Galatina and Cantina i Pastini in Manduria.

We personally select and check all the raw materials we use to ensure the quality and authenticity you deserve.
